Stir Fried Noodle Cambodian Style (Chhar Mee Katang) – ឆាមីកាតាំង
1- Wide Rice Noodles (peel the noodles from its layers.)
2- Chinese broccoli, washed and 1/2 inch diagonal slices and leaves cut in half, separate stalks (stems) and leaves.
3- Corn starch or potato starch or Tapioca starch
4- Olive oil
5- Vegetable cooking oil
6- Oyster sauce
7- Black soy sauce (Thick sweet soy sauce)
9- Beef broth (In a separate bowl, mix the beef broth and cornstarch until the powder dissolves)
10- Beef, thinly sliced (In a separate bowl, mix the slices of beef with oyster sauce, sugar, starch, olive oil, black soy sauce)
How To Make It
1- Heat a large wok on high temperature until cooking surface is hot.
2- Add stalks (stems) of Chinese broccoli first. Stir Fried in one minute.
3- Cover it up for ten seconds.
4- Add leaves of Chinese broccoli. Stir Fried in one minute.
5- Cover it up for ten seconds.
6- Stir Fried just a bit then put the veggie in a separate bowl on the side.
7- Heat the wok on high temperature again until cooking surface is hot.
8- Add slices of beef. Stir fry a couple minutes.
9- Then pour over the veggies bowl. Keep them on side.
10- Add the mixture of beef broth into hot wok.
11- Stir the mixture of beef broth until a thick gravy forms in the wok.
12- Add meat and veggies to the mixture of beef broth.
13- Add oyster Sauce. Stir it to mix abit.
14-Add noodles. Stir Fried till it mixed to your like.
